So, here’s a great recipe to get some avocado greatness into your diet. The ingredient amounts look odd because the original recipe served 24, and I just did a simple recalculation to make it to serve four instead.



Recipe Provided By the California Avocado Commission

• 1⁄6 lbs. and 4 ounces penne (or other short, macaroni-style pasta)
• 1⁄6 cups vinaigrette
• 1⁄6 lb. diced red bell pepper
• 1⁄6 lb. diced green bell pepper
• 2 oz. Feta cheese
• 2 oz. chopped red onion
• 2 oz. black olives, pitted, coarsely chopped
• 1⁄4 Tbsp. chopped garlic
• 1⁄8 cup chopped parsley
• 1 1⁄6 California Avocados, cut in chunks

1. Cook pasta in salted, boiling water until just tender, about 10 minutes; drain well.
2. While still warm, toss with vinaigrette; cool.
3. Fold in remaining ingredients.

Nutrition information per serving
Nutrition Information per Serving: 460 calories, 28g of fat, 15mg of cholesterol, 450mg of sodium, and 14g of protein.
