Art & Cars in Fallbrook…

This Friday, May 17 is the opening reception for Fallbrook Art Association’s Annual Juried Art Show featuring regional artists in all mediums. The show runs through June 7.  (For more information:  www.fallbrookartcenter.org/)
Sunday May 26 — yes, Memorial Day Sunday — Fallbrook Vintage Car Club presents its 48th Annual Vintage Car Show. Enjoy fabulous vintage cars and trucks, food, and the annual swap meet…it’s great fun!!

And now, here’s this week’s awesome avocado recipe (from California Avocado Commission):

Anytime Omelet

Ingredients:

• 3 eggs, lightly beaten
• 3 Tbsp low fat milk
• Nonstick cooking spray
• 1/2 c shredded cheddar cheese
• 1 Tbsp sliced green onion
• 1/4 c chopped red bell pepper
• 1 ripe, fresh California Avocado, seeded, peeled, and cubed

Directions:

Mix eggs and milk.  Spray a large skillet with nonstick cooking spray and heat over medium low heat.  Pour egg mixture into the skillet.  Cook eggs until top is almost set.  Sprinkle with cheese and green onion.  Cook until cheese melts about 2 minutes.  Top with red bell pepper and avocado, fold over, and serve immediately.  Yum.
